It is so hot and humid that desserts need to be light and delicious. Fruit salad is an obvious solution but I wanted to see if I could create something more original.
The colours were inspired by Paulette Tavormina's photographs. I also wanted to make it taste as vibrant as it looks so...............
The figs were marinaded in a syrup infused with fresh cardamom. The slightly astringent spice balances the intense sweetness beautifully.
The pineapple was marinaded in a syrup infused with fresh ginger and garnished with fine shreds of crystallized ginger.
The white peach was gently poached in an aromatic Muscat wine spiked with fresh lavender flowers.
This was served with a scoop of home made banana ice cream.
The guests loved it.
