A new toy!

It isn't Christmas yet but I've got a new toy to play with! A mincing machine with a sausage making attachment.

I've been wanting a mincer for a while because I want to make my own patés and terrines. When I found this one (yes it was in a house clearance, but in its original box, unused with all the receipts and instructions) it has the sausage making attachment as well, bonus! Although you have to get over the giggly stage as you thread the lengths of sausage skin onto the nozzle!

Favourites so far are pork with leek and sage, or with chestnuts and forest mushrooms, with lots more ideas to pursue. I think the next batch will be smoked.

These are the chestnut and mushroom variety roasted with peppers and served purees of carrot and pumpkin. They were absolutely delicious.
