Shepherds' pie

This is for Lillian who is currently in hospital in Australia and suffering some truly dreadful food. Her email made me think about simple comfort food and what could be more comforting that a home made shepherds pie?

By chance Sunday lunch was a leg of lamb roasted on the spit with vegetables cooked beneath it.

Served on a bed of cous cous with fresh mint it was scrummy.
I'm not fond of cold lamb so it was minced and used to make individual shepherds pies cooked in metal rings to hold the shape.
The potatoes on top are called Vitelotte, an ancient breed that has a deep inky purple colour. They taste delicious and the intense colour is a bonus.
